- Whole Milk: 2 cups
- Sugar: ½ cup
- Eggs: 3
- Walnut: 1 ½ cup (chopped and toasted)
- Cinnamon: 2 tsp
- Flour: 2 ½ cups
- Baking Powder: 2 ½ tsp
- Coconut oil, butter, or ghee
- Kosher Salt: 1 ½ tsp
You need to pack the flour, cinnamon, salt, sugar, and baking powder in an air-tight container at home. The following process is to be done at the campsite.
First of all, place 5 bananas in a bowl and mash it with a fork until smooth. Now, add the egg first and mix it with the bananas. Once it is smooth, add the milk. You need to beat all the 3 ingredients together until it is a smooth paste.
Secondly, put all the dry items in the mixture and blend it well with the wet items. However, do not overmix it; if there are few small lumps, then it is alright. Also, if the batter is too thick, you can add ½ cup of milk to it.
Thirdly, heat a pan or skillet, low-medium flame, and add coconut oil, butter, or ghee. Add more of it if you are using a cast iron pan. Cover the whole pan with it. Now pour some of the batter on the center of the pan, and on top of the batter, add some chopped walnuts.
Cook it for 3 – 4 minutes until the top portion begins to bubble. Once it starts bubbling, flip the pancake and cook the other side for 3 – 4 minutes.
